Banana Chocolate Muffins (Makes 24)

**Ingredients:**
– 3 cups all-purpose flour
– 2 teaspoons baking powder
– 2 teaspoons baking soda
– 1 teaspoon salt
– 6 ripe bananas, mashed
– 1 cup granulated sugar
– 1 cup brown sugar
– ⅔ cup melted butter (or vegetable oil)
– 2 large eggs
– 2 teaspoons vanilla extract
– 2 cups chocolate chips (plus extra for topping)
– Optional: 1 cup chopped nuts (e.g., pecans or walnuts)

**Instructions:**

1. Preheat oven to 350°F (175°C) and line two 12-cup muffin tins with paper liners.

2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

3. In another large bowl, mash the ripe bananas. Add the granulated sugar, brown sugar, melted butter (or oil), eggs, and vanilla extract. Mix until well combined.

4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

5. Gently fold in the chocolate chips (and nuts if using).

6. Divide the batter evenly among the 24 muffin cups, filling each about ¾ full. Sprinkle extra chocolate chips on top if desired.
