Okra Overload? Here’s How to Cook It into a Delicious Gumbo!

Haitian epis is a flavorful seasoning blend used as a base in many Haitian dishes. It’s a staple in Haitian cooking, and making it fresh at home is key to bringing out the best flavors in your dishes. Here’s a recipe you can try:
Ingredients:
• 1 large green bell pepper, chopped
• 1 large red bell pepper, chopped
• 1 large yellow onion, chopped
• 3-4 scallions, chopped
• 1 bunch of fresh parsley, chopped
• 1 bunch of fresh cilantro, chopped
• 10-12 cloves garlic, peeled
• 2-3 sprigs of fresh thyme
• 1-2 Scotch bonnet peppers (optional, depending on heat preference)
• 1 tablespoon of salt (adjust to taste)
• 1 tablespoon of black pepper
• 1/4 cup of fresh lime juice (or the juice of 2 limes)
• 1/2 cup of olive oil or vegetable oil
• 1/4 cup of vinegar (white or apple cider)
• 1-2 tablespoons of ground cloves (optional)
Instructions:
1. Prepare the Vegetables and Herbs: Start by washing and roughly chopping all the vegetables and herbs. Remove the seeds from the bell peppers to reduce bitterness. If you prefer a milder epis, you can remove the seeds from the Scotch bonnet peppers as well.
2. Blend the Ingredients: Add the chopped vegetables, herbs, and garlic to a blender or food processor. Add the thyme, salt, black pepper, lime juice, oil, and vinegar.
3. Blend until Smooth: Blend the mixture until it forms a smooth paste. You may need to stop and scrape down the sides of the blender or add a little water to help it blend smoothly.
4. Store the Epis: Transfer the epis to a glass jar with a tight-fitting lid. Store it in the refrigerator. It can last up to 1-2 weeks, or you can freeze it in portions for longer storage.
Tips:
• Adjust the salt and pepper to your taste.
• You can also add celery, leeks, or other herbs based on your preference or regional variations.
• Use epis to marinate meats, flavor stews, or enhance the taste of rice and beans.
This epis blend will infuse your dishes with rich, authentic Haitian flavors.
