Easy Pineapples Fried Rice!

Ingredients:
– 1 fresh pineapple, hollowed out and diced (reserve the shell for serving)
– 4 chicken thighs, sautéed and sliced
– 1 lb shrimp, peeled and deveined
– 3 cups cooked jasmine rice (preferably day-old)
– 1 cup bean sprouts
– 2 eggs, lightly beaten
– 1 onion, finely chopped
– 3 cloves garlic, minced
– 1 red bell pepper, diced
– 1 cup frozen peas and carrots
– 3 tablespoons soy sauce
– 2 tablespoons oyster sauce
– 1 tablespoon fish sauce (optional)
– 1 tablespoon sesame oil
– 2 tablespoons vegetable oil
– Green onions, chopped (for garnish)
– Cashews or roasted peanuts (optional, for garnish)
– Lime wedges (for serving)
Instructions:
1. Prepare the Chicken Thighs:
– Marinate the chicken thighs in a mixture of soy sauce, garlic, and a dash of sesame oil for at least 30 minutes.
– Sauté the marinated chicken thighs in a hot pan until fully cooked and golden brown. Remove from the pan, let them rest, and then slice into bite-sized pieces. Set aside.
2. Cook the Shrimp:
– In the same pan, add a bit more oil if needed, and sauté the shrimp until they turn pink and are cooked through. Remove and set aside.
3. Prepare the Rice:
– In a large pan or wok, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
– Add the minced garlic and cook for another minute until fragrant.
– Push the onion and garlic to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until cooked, then mix with the onion and garlic.
– Add the diced red bell pepper, frozen peas and carrots, and bean sprouts. Stir-fry for 2-3 minutes until the vegetables are tender.
4. Combine Ingredients:
– Add the cooked jasmine rice to the pan, breaking up any clumps with your spatula.
– Pour in the soy sauce, oyster sauce, and fish sauce (if using). Stir everything together until the rice is evenly coated with the sauces.
– Gently fold in the diced pineapple, cooked shrimp, and sliced chicken thighs.
5. Final Touches:
– Drizzle with sesame oil for added flavor and toss everything together one last time.
– Transfer the fried rice into the reserved pineapple shell for a beautiful presentation.
6. Serve and Enjoy:
– Serve the Pineapple Fried Rice warm, straight from the pineapple shell. Squeeze lime juice over the top for a zesty finish.
